Cornbread
A vegan version of a bread made from cornmeal with origins in Southern Cuisine. 1
Recipe 1
Dry:
- 1.25 cup cornmeal
- 1 cup flour
- 1 tsp baking powder
- 1 tsp baking soda
- 0.5 cup brown sugar
Wet:
- 0.25 cup melted butter
- 1 cup unsweetened vegan milk
- 1 tbsp apple cider vinegar
- 1 tsp salt
- Optional mixins:
- 1 cup corn kernels
- 1 thinly sliced jalapeno
Instructions:
- Mix dry ingredients first
- Mix wet ingredients separately
- Slowly stir wet ingredients into the dry ingredients, but don't overmix
- Preheat oven to 400F
- Bake in greased 8-9 inch pans for 20-25 minutes
