Cornbread

A vegan version of a bread made from cornmeal with origins in Southern Cuisine. 1

Recipe 1

Dry:

  • 1.25 cup cornmeal
  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.5 cup brown sugar

Wet:

  • 0.25 cup melted butter
  • 1 cup unsweetened vegan milk
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • Optional mixins:
    • 1 cup corn kernels
    • 1 thinly sliced jalapeno

Instructions:

  1. Mix dry ingredients first
  2. Mix wet ingredients separately
  3. Slowly stir wet ingredients into the dry ingredients, but don't overmix
  4. Preheat oven to 400F
  5. Bake in greased 8-9 inch pans for 20-25 minutes
